I'd call it salad. Vegetable lasagna has cooked vegetables, because lasagna is a baked dish. Tomatoes and tomato sauce. Broccoli. Spinach. Eggplant. Baked. If you want to make it vegan by leaving out the meat and cheese, that's no reason to make it raw, like salad.
