Language and culture evolve over time. People like this just want to label all forms of change as bad. Sure it's more polite for people to refer to me as "Miss Harness," but it's certainly a lot more comfortable to hear "Jill."
It's also got pork drippings from cooking sausage and as John said, the sausage is often mixed into the gravy. In America, biscuits doesn't mean cookies like it does in so many other places. They're kind of like fluffy, non-sweet scones.
