I tasted Patanegra ham last year and this ham was amazingly good and tasty. It's quite expensive, although not as much at this one, but worth it. Go Spain!
This transversal log technique is already in use, except that a mix of cement / earth / hay is inserted between logs. It's more traditional than architectural.
