My town only went wet about ten years ago, and the surrounding county is still dry. The whole region was dry when I was growing up, and bootleggers were everywhere. They became drug dealers, too. The nearest bars were across the state line in Tennessee, which led to accidents all the time. People who grew up in the dry era either don't drink at all or drink as much as they can every chance they get. I can't say everyone, I drink rarely, but still, those two extremes stand out.
I'd call it salad. Vegetable lasagna has cooked vegetables, because lasagna is a baked dish. Tomatoes and tomato sauce. Broccoli. Spinach. Eggplant. Baked. If you want to make it vegan by leaving out the meat and cheese, that's no reason to make it raw, like salad.
Note: I was struck by the reference to the third millennium BC as "prehistory," so I looked it up. The definition of "prehistory" varies for different places, because "history" begins when a culture has a written language for archiving information.
