While the exchange was fun, it might have been more fun to go to court and put the officer on the stand: Ask him when he was born and when he joined the force. Letters of Note used to be a regular haunt. Thanks for reminding me about it. Will go back soon.

Ah, the Royal Society and its obsession with weighing air!
While this looks horrifying (and to moderns trivial), air pumps were one of the first uses of steam engines. The brought fresh air into mines so that coal and iron could be extracted. Demonstrations (or experiments as they were called back then) showed investors and the curious how they worked and why they were important.

Eggs are another variable. The yolks are about the same size as a century ago, but the whites are larger. If in doubt, use small or medium eggs. Butter is not the same either. These days it can have much more water than in olden times. The best bet is to melt it, refrigerate, and pour off the water once hardened.
