Thank you for this great information, I have been smoking meat for over 35 years and the various Bar B Q's were fantastic. I formerly owned a restaurant in Huntington Beach,Ca. by the name of Heeneys Weeney's which specialized in fresh sausages and weiners, Beef Brisket,Smoked Chichen and Pork Ribs with all sided served being home made. I miss the business but not the long hours, again thank you.
