They take all waste matter on the ships and convert it into, at first jello jigglers and then in later Enterprises real food.  They mention it in passing on one of the cartoon episodes, but in general Gene Roddenberry just assumed everyone would get it (that from an old interview in The Tribble Tribune).</description>
