Unfortunately the controls for a 1500 foot cruise ship in the game are approximately what you would find on a 10 foot powerboat. Also the reaction times for the engines aren't factored in at all, unlike a powerboat when you move the throttle, there is an instantaneous reaction, on a ship it can take a minute or more for the engine to react and then even more time for the vessel to actualy respond to engine. I know I am ruining all your fun! sorry... Was going to mention it myself. Never played it myself. There's also boats you can get for Flightsim. I remember tearing around the water near Meigs in a Coast Guard vessel.
