Not a metajoke at all, but I heard it today, and had to share. A man and his wife are driving down the road in the rain. They pass a homeless dog on the side of the road, and the wife tells the husband to turn around to they can rescue it. They get it in the car, and the dog is shivering. The man says, "put it between your legs to warm it up." The woman replies, "I can't do that! It'd stink!" So the man says, "you could hold his nose."

How many people of a particular social or ethnic group does it take to screw in a lightbulb?

A finite number. One to screw in the lightbulb and the rest to behave in a manner stereotypical of that group.
