Its called pressure, by taking the top and the bottom of the egg shell off you are creating basically a tube that the egg is in. The lining of the egg shell that holds it on is very weak. So by blowing air pressure on one side of the egg and holding the shell in hand the edible part of the egg has no other place to go than down and out!
